Might be something to do with me not checking the right box for daylight savings time - I'll investigate ASAP.

The default time setting is GMT-5, which having lived in both Boston and the UK is theoretically correct, and there actually isn't a daylight savings time option to use, so I'm not sure what the problem is; perhaps it's set to GMT-6 in your own settings - it might be worth checking.
